Sorrel is an easy-to-grow perennial with a pleasantly tart, lemony flavor. It can be eaten raw as a leafy green, or paired with pasta or eggs, or cooked in classic recipes like French Sorrel Soup. I like to take a handful of leaves and cut them into ribbons, then toss with lettuce for a bright, tangy addition to salads. It also makes for a refreshing nibble as I walk through the garden! For best flavor, harvest young leaves in spring and fall. I don’t harvest it during the heat of summer as the leaves become bitter. Sorrel overwinters well with no protection; the top growth dies back, but new leaves will emerge in early spring from the roots. Full to partial sun. Grows a foot or less in height, and 1 to 2 feet wide when mature.
