Foeniculum vulgare

The above-ground bulbs of this heirloom fennel add a fresh, sweet-licorice flavor to salads, gratins, pasta and soup. The aromatic, feathery leaves have a mildly sweet flavor and can also be used as a pleasant addition to salads, slaws, and dressings. Seeds can be used in baking, as well as in teas and tinctures to ease digestive complaints.

Fennel is an excellent herb for beneficial insects, and is particularly attractive to swallowtail butterflies.

Cool season crop, 2’ height, full sun. Easiest to grow in the fall, as high heat and long days of summer encourage bolting. Can also be grown in spring and harvested at baby size if temps get too hot.
